Preheat oven to 160°C (140° fan-forced). Lightly spray a large char-grill pan or barbecue with oil. Heat over medium heat and cook sausages for 10-12 minutes, turning regularly, or until cooked through. Set aside on a plate loosely covered with foil.
Meanwhile, place tomatoes, corn, beans, oil and taco seasoning in a medium bowl and gently toss to combine.
Divide coleslaw between hot dog buns. Top with sausages, half the salsa, half the cheese, corn chips and a top with little more cheese. Arrange on a baking tray and cook in oven for 3-4 minutes, or until cheese is melted. Serve with extra salsa plus your choice of guacamole, sour cream, jalapenos, hot sauce, lime wedges and coriander.
Tips
Swap thin beef sausages for thick beef sausages; alternatively cook beef mince with salsa ingredients and serve the spiced mince in the hot dog bun.
Serve hot dogs with as many or as few of the suggested sides as you like.
This is a great recipe for feeding a crowd – you can simply cook the sausages and lay them out with all the other ingredients for people to build their own hot dogs.
